Executive Chef John Wolff brings nearly a decade of knowledge and creativity from his previous positions with upscale luxury resorts to the Thistle Lodge. This talented Sanibel Island chef has a talent for improving the quality and consistency of Thistle Lodge's acclaimed cuisine as well as special event and catered selections while remaining true to the food and flavors our guests have cherished for years.
"One of the things that drew me to this place was the tradition of the Sanibel style," Wolff said. "I'm highly cognizant of the past, of the things that have been done here for a long time, the things that people come back for. We will continue to refine the elegance and the quality that people have come to respect over the years."
For John, elegance is straightforward and classic. He doesn't rely heavily on garnish or frill, letting the unique flavors of each ingredient 'wow' our guests. It's the best way for Wolff to maintain the restaurant's traditional allure while leaving his own distinctive mark. "I tend to be a little more simplistic, a little more classic. I let the food speak for itself. The simpler the plate, the better."
